DESCRIPTION OF PROJECT
This project will explore opportunities presented by naturally occurring antioxidants from grapes and wine in collaboration with an industry-leading global wine company. The project will involve critical review of health data covering antioxidants and their efficacy in humans and animal models, identify the latest discoveries and determine evidence of benefits. The aim will be to identify areas of opportunity for association with a regular consumption of a level of antioxidants and how they may be delivered. In particular, the candidate will consider the advantages and challenges of antioxidant-enriched beverages as a means of achieving a daily intake. Depending on the outcome of review, the project may then progress to development of extractive techniques from grapes and vines, processing and formulation of antioxidants in beverages.
