各位大神：求论文摘要翻译 牛干巴是云南省民族传统特色腌腊肉制品。目前，牛干巴无国家标准、行业标准和地方标准，各企业的技术指标参差不齐，且没有将三甲胺氮作为评价牛干巴优劣的指标。本文是牛干巴地方标准中的一部分，着重对其感官指标、亚硝酸盐和三甲胺氮做出研究，同时参考相关腌腊肉制品的国家标准及牛干巴企业标准，确定了牛干巴的感官指标，亚硝酸盐含量不大于10mg/kg，三甲胺氮含量不大于20mg/kg作为云南省地方标准的参考，并探讨了这些指标作为地方标准的依据、必要性和合理性。 |
