PPO activity decreased as the ethanol concentration was in-creased. At an ethanol concentration of 10%, the enzyme lost 30% of its activity, at a 20% ethanol concentration, the loss in activity of PPO was almost 90% and at a concentration of 30% ethanol, the enzyme activity was completely inhibited. A decrease in enzy-matic activity in the presence of ethanol has previously been re-ported for bromelain (total inhibition at 50% ethanol) ( Hasan, Rasheedi, & Khatun, 2003 ).
