In the present study, we extract polysaccharides from banana (Musa nana Lour.) and investigate their antioxidant capacities. We extract the polysaccharide by water and determine it content using phenol-sulfuric acid method. In addition the banana polysaccharide scavenging abilities on DPPH and OH free radicals were measured. The results showed that banana peel contained 13.65% polysaccharide. 160mg/l polysaccharide sample scavenged 67% DPPH, equal to 8.24mg/l Vc, and the scavenging effect of 64mg/ml sample on OH free radicals reached 51.33-53.46%. In the testing range, the OH scavenging ability increased with the sample concentration rising. There existed much polysaccharide in banana peel with antioxidant abilities. |
