以枇杷果实为试材,采后分别以壳聚糖膜、壳聚糖-明胶-海藻酸钠复合膜涂膜保鲜枇杷果实,用聚乙烯薄膜袋包装后于6±0.5 ℃低温贮藏,对枇杷果实的生理及品质变化效果进行对比研究。结果表明:壳聚糖-明胶-海藻酸钠复合膜涂膜处理对枇杷果实的保鲜效果较佳,该组枇杷果实的各项生理及品质指标都显著高于壳聚糖膜涂膜组。如:贮藏35 d后,壳聚糖复合膜涂膜处理组枇杷果实失重率低于壳聚糖膜涂膜处理组0.8 %,好果率高9.83 %;在壳聚糖复合膜涂膜处理贮藏前期枇杷果实中的过氧化物酶活性呈升高趋势,但从第28 d开始迅速降低,到贮藏结束时比贮藏前降低了150.1 U·g-1。说明壳聚糖-明胶-海藻酸钠复合膜对枇杷果实保鲜效果较好。

In this paper, we presented the preservation effect of chitosan membrane, chitosan - gelatin - sodium alginate composite film which coated with fresh loquat fruit,and stored those loquat fruit  packaging in polyethylene film
at 6 + 0.5 ℃. Results show that preservation effect of chitosan gelatin - sodium alginate composite film coating treatment on loquat fruit is better,  the physical and quality index of the loquat fruit was significantly higher than the chitosan film coating group, after storage 35 d, weightlessness rate of chitosan coating composite film below 0.8% to tosan film coating,and  good fruit higher 9.83%; Thougt peroxidase activity in the loquat fruit is rising trend In the early  storage using chitosan coating composite film , but after  28 d it began falling rapidly, to end reduced 150.1 U · g - 1 comparing at first storage. The research was conducted with preservation effect of hitosan gelatin- sodium alginate composite membrane for the loquat fruit  is best.
