| 在油脂的水解过程中，油脂中的甘油酯键断裂，导致油脂在水解之后分子量的减小。且由于油脂中的脂肪酸为混合物，其中单个脂肪酸链上存在一个或两个环氧基团，因此在聚合与水解反应过后，根据脂肪酸分子的通用结构式可计算出单个脂肪酸的分子量范围为279~293。 |

| In the hydrolysis of fats, the glycerides bonds break, resulting in a reduction in the molecular weight. Since the fatty acids in fats are mixtures and there are one or two epoxy groups on a single fatty acid chain, the molecular weight of a single fatty acid molecule can be calculated to be 279 - 293 based on the general structural formula after polymerization and hydrolysis. |
