[交流] What dishes or cuisines you like most ?

Autumn is a fantastic season that has many good food, and our country has many provinces each of them has special dishes so would you please introduce the dishes yo u like most, and if you can describe the ingredients as well as procedure how to cook it, then we will appreciate that.

To begin with, my favourite dish is Salmon fish head soup in pot

Ingredients:
Salmon fish head about 0.8 - 1.0kg
ginger slices
garlic chops
spring onion pieces
HuaDiao Wine four spoons
Chinese Vinegar
Soyabean sauce

Cut the fish head into reasonable chops, remove sharp teeth and unwanted gill
slightly fire the fish head chops with garlic chops and little peanut oil, purpose to keep it juicy

Burn one bowl of water to hot in the pot, put the fired fish head chops along with garlic chops into the pot, and after a while (20 seconds) add all other ingredients.

Keep high fire for one minute and change over to low fire and wait for another 15 minutes then the serve it in a big bowl.

it's cool. the hot index.
My current favorite dish is  sichuan cuisine. particularly fish-flavored pork, kungbao chicken. but i have no idea about how to cook it.
For complete this poster, I introduce the cooking method of sichuan pickles.

prepare tool and vegetable ingredients:
a clean and dry pickle jar.
dozens of hot green pepper.
garlic, ginger, long chunked ternip.

seasoning:
pickles salt.
sorghum liquor.
xanthoxylum seeds  
aniseed.

procedure:
the stock solution from neighbor's already pickles jar. a bowl.
infunde the stock solution to our pickle jar.
pour the sorghum liquor into the jar.
put in xanthoxylum seeds, aniseed.
one layer vegetable ingredients is spreaded , then one layer of salt is covered. then another layer vegetable, and another salt lalyer. repeat.
cover the pickles jar lid, sealing the lid by pouring water. that's all.

Recently, Autumn weather make the throat dry and we need some soup to soften it.

Watercress 500g please rinse with water throughoutly, sometimes it is easy to find worms on leaf
preserved duck kidneys 3pcs. cut them into slices
Pork bone, pre-treated by hot water to remove dirts and cook along with young ginger slices, honey preserved jujube, and some salt to prepare the soup base. Cook for 20 minutes and mix the above ingredients and continue cooking for another 30 minutes before serve.

I like fruits and vegetable very much. For the most of the fish, chichen,duck and pork  etc, I cant do them very well. But if someone can do it best and very delicious I also like it very much!

For me I am very like cooking the scrambled eggs with tomato. Its not only  very easy to cook but also very delicious and nutrient. I think it must the most common and usually eat dish in many of the family. I dont know if you also like it?

Chinese food for Chinese stomach. But I can cook nothing. I will learn.
My favorate is Dry-Fried French Beans with Minced Pork and Preserved Vegetables.
I love chilli powder, so Sichuan Cuisine, Hunan Cuisine, Jiangxi Cuisine and Anhui Cuisine as well.
