摘要:本实验将山药做为特殊的营养保健成分加入蛋糕制作中,在传统的制作配方上进行改进试图研制出口感良好、营养丰富且具有保健功能的山药保健蛋糕,使其更符合现代人对食品的需求。方法:先进行预实验确定打蛋时间为15min,烘烤温度为上火170℃,下火170℃,然后对白砂糖、鸡蛋、山药粉、纯净水进行5-7个水平的单因素实验确定各个因素的最适加入量,再进行正交实验,通过感官综合评价最终确定出山药保健蛋糕的最佳配方。结果:实验表明山药保健蛋糕的最佳配方为:面粉200g,白砂糖150g,鸡蛋200g,山药粉6g,纯净水160mL,蛋糕油8g。

Method: experimental determination of egg 15min, baking temperature to put fire 170℃, fire under 170℃, and white sugar, eggs, powder, purified water 5-7 horizontal form factors determining optimum content of various factors and orthogonal experimental, sensory evaluation by finalizing the health of Chinese yam cakes best recipes.Results: experiments show that health of Chinese yam cakes best recipes: 200g flour, sugar 150g, 200g eggs, powder mountain 6g, 160mL purified water and oil-cake 8g.

此配方做出的山药蛋糕色泽均一、鲜亮,组织细腻,口感绵软,弹性韧性好,山药滋味柔和。
