摘要：本实验将山药做为特殊的营养保健成分加入蛋糕制作中，在传统的制作配方上进行改进试图研制出口感良好、营养丰富且具有保健功能的山药保健蛋糕，使其更符合现代人对食品的需求。方法：先进行预实验确定打蛋时间为15min，烘烤温度为上火170℃，下火170℃，然后对白砂糖、鸡蛋、山药粉、纯净水进行5-7个水平的单因素实验确定各个因素的最适加入量，再进行正交实验，通过感官综合评价最终确定出山药保健蛋糕的最佳配方。结果：实验表明山药保健蛋糕的最佳配方为：面粉200g，白砂糖150g，鸡蛋200g，山药粉6g，纯净水160mL，蛋糕油8g。 关键字：山药；保健蛋糕；研制 |
