An enzymatically based assay for glucose involves the oxidation of b-D-glucose to
gluconic acid. Oxygen consumption is measured by an oxygen probe and related to
glucose concentration. When a new standard is made by dissolving b-D-glucose in
water, and the standard solution is repeatedly analyzed by this method, the glucose level
appears to decrease to about 70% of the value originally measured over a period of 2
hours. After 2 hours, the glucose reading obtained with this standard no longer changes.
Give an explanation for this behavior.
