籽用南瓜果肉中营养成分丰富且含量合理，其中蛋白质含量在1.5%左右，人们对南瓜果肉蛋白研究较少，可作为新蛋白资源开发；作为食品的功能因子的膳食纤维及其食品，近年来在世界各国也得到了广泛的关注和迅速的发展，籽用南瓜果肉中膳食纤维含量高达12.4%，是干物质的主要成分，开发利用南瓜膳食纤维拥有巨大的市场。籽用南瓜果肉中淀粉含量较低，含量在3%左右，但是我国南瓜资源丰富，且废弃果肉成本为零，可作为制备燃料乙醇的原料，缓解由于粮食制备乙醇带来的粮食和油价的上涨。从社会经济角度来讲，籽用南瓜果肉的开发和利用具有广阔的市场，其前景十分诱人。

Pumpkin pulp is  lower in its starch content, about  3%. and in China we are rich in resources of pumpkins, and the cost of  waste pulp is zero and futhermore it can be used as feedstock of  fuel ethanol   to ease the preparation of the food grain ethanol and oil prices rise. From the socio-economic point of view, the development and use of pumpkin flesh has a broad market,of which the prospects are very attractive.

Nutrients in the pumpkin pulp  is rich and reasonable, of which protein content is about 1.5% . as a new protein resources, less studies were carried out on pumpkin flesh proteins.
