籽用南瓜果肉中营养成分丰富且含量合理，其中蛋白质含量在1.5%左右，人们对南瓜果肉蛋白研究较少，可作为新蛋白资源开发；作为食品的功能因子的膳食纤维及其食品，近年来在世界各国也得到了广泛的关注和迅速的发展，籽用南瓜果肉中膳食纤维含量高达12.4%，是干物质的主要成分，开发利用南瓜膳食纤维拥有巨大的市场。籽用南瓜果肉中淀粉含量较低，含量在3%左右，但是我国南瓜资源丰富，且废弃果肉成本为零，可作为制备燃料乙醇的原料，缓解由于粮食制备乙醇带来的粮食和油价的上涨。从社会经济角度来讲，籽用南瓜果肉的开发和利用具有广阔的市场，其前景十分诱人。 [ Last edited by Mally89 on 2011-4-9 at 17:19 ] |
