At the same time, the results are compared with nature defrosting. The results indicate the high-voltage field can improve the thawing rate significantly and reducing the risk of bacterial contamination. the high-voltage electrostatic field is a good alternative methods. |

| The thawing effect of the high-voltage electrostatic field on thawing was investigated with fish as a model , the drip loss and the bacterial contamination of the thawed fish were measured by altering the electrode arrangement(±¾ÈËÒÔΪӦ¸ÃΪshape) and the thawing voltage. In this paper, the influence on fish thawing of the high-voltage electrostatic field was investigated using fish as the object model. The drip loss of the thawed fish and the bacterial contamination determined utilizing a converted high-voltage electrostatic equipment by changing the electrode arrangement and the voltage, in comparison with that of nature thawing. The result showed that the the thawing rate in high-voltage field was improved significantly and with fewer bacterial contaimination and lower drip loss, thus it was supposed to be a better candidate solution to future thawing.
