My three cents:
In chemistry the number of work published on catalysis is xx
OR
In chemistry the number of publications on catalysis is xx
同意8楼的解释，literature正常是不能用复数的。中文的“文献”在英文有以下几个译法：
1. work 最贴近“文献”，因为work不特指论文、图书、。。。，而是泛指。从原文看，似乎并不需要特指，所以个人认为work最合适。注意work在此不能加复数（加复数另有别的意思，例如First Auto Works)
2. publication和work类似，不特指，用来译原文也很好,可用复数。
3. paper一般特指会议文章、期刊文章、。。。在此不大合适。
4. article虽然可以指文章，但不如paper（比如在报纸上写的就只能叫article，不能叫paper）.在此也不大合适。
5. ”化学领域“ 没必要翻领域，直接说chemistry 即可 (某某领域是中文习惯），不会误解。
6. 主题词用work on 或者publication on 即可，不一定用keyword，不会误解。

Literature is a "body of work" and can be plural or singular, but always uses the singular form of a verb (e.g. The literature is, The literature shows)

There is normally no S form. It has very limited application.
