| 大豆蛋白的热稳定性较差，这不仅与加热温度有关，也与加热时间有关。实验结果表明温度越高，加热时间越长，废水中的大豆蛋白性能改变越大，其中大豆蛋白的溶解度变化明显，当温度为65 oC，加热时间为6 h时大豆蛋白溶解度最小，其最小值为0.189 g/（100 g溶剂）。综合温度对大豆蛋白溶解度以及溶液粘度的影响，泡沫分离大豆蛋白工艺中选择温度为50 oC是合理的。 |
