All living organisms can be affected by the electrostatic field. The resulting effects in general can be divided into two aspects: 1) positive effects, which strengthen the metabolism and enhance the activities of various enzymes in the organism, 2) negative effects, which attenuate the metabolism and reduce the enzyme activities even with lethal effects. According to a number of experimental results, it is actually the negative effects of the electrostatic field that were used in food preservation with high voltage electrostatic field, which weakened the bacterial metabolism or even killed the bacteria, thus prolonging the storage period of the food.
