帮朋友求助，翻译软件太烂了，高氯酸－－Gao chloric acid，晕！ 摘 要 目的 考察不同的配方中乳酸菌对无机硒生物的转化能力 方法 通过改变富硒酸奶的处方条件，例如接种量、硒的浓度、其它配料等，考察乳酸菌对无机硒的利用能力。将培养好的样品进行细胞离心，离心后的量取上清液，以此得到残留的无机硒，再用总的加加硒量减去，得到有机硒的含量。用浓硫酸-高氯酸的消化体系消化样品后准确测定无机硒，利用紫外分光光度法，于335nm处测量吸光度,在标准曲线上查出硒含量，计算无机硒的利用率和转化率。 结果 利用透析的方法，将无机硒和有机硒分开。其总硒含量达0.4μg/mL,转化硒为0.323μg/mL,转化率为92.43%。 结论 乳酸菌接种量7%,加糖量8%,在40℃发酵可制得口感和组织状态较佳的酸乳制品,与普通酸乳相比感官和理化指标均无差别。有机硒含量达到0.323μg/mL,成人每日饮用200~500 mL充分满足对硒的需求。 关键词: 无机硒 有机硒 加硒条件 乳酸菌 生物转化 利用率 转化率 [ Last edited by 小晓春 on 2007-6-16 at 04:56 ] |
