摘要：葛根是是卫生部批准的药食两用植物，具有保健和治疗作用。本文以葛根作为蛋糕生产的主要辅料，以面粉、糖、鸡蛋、蛋糕油、纯净水为原料，通过单因素试验和正交试验，对葛根保健蛋糕配方及生产工艺进行探讨，并根据感官品评指标确定葛根保健蛋糕最佳配方，以期制作出具有保健功能的蛋糕。结果表明：葛根保健蛋糕中面粉、鸡蛋、白砂糖、葛根、蛋糕油、纯净水的添加量分别为200g、220g、140g、8g、10g、130ml时，蛋糕的品质最佳。 关键词：葛根；保健蛋糕；研制 |

The testing shows that:the quality of the healthy Kudzu root cake is best when the proportion of flour,egg,white sugar,kudzu root,cake oil,pure water separately be 200G,220g,140g,8g,10gm,130ml. Gordon is both medicinal and edible plant with healthy care and therapeutic effects so it is approved by the Ministry of Health. In this paper, Gordon is the main material of the cake and make the flour, oil, sugar, eggs, cakes, pure water as raw materials, through the Single Factor testing with Orthogonal Test, we make a discussion on the kudzu healthy cake recipes and production process, and base on the sensory evaluation indicators to determine the best recipe Gegen healthy cake which is a view to cake made with healthy care function.The results indicate that when the Gegen healthy cake which the amount of flour, eggs, white granulated sugar, Gordon, added respectively on the cake of oil, pure water is 0g, 220g, 140g, 8g, 10g, 130ml, the quality of the cake is the best. Abstact: Pueraiae, approved by Ministry of Health, is a plant both having medical and edible functions, and possesses healthy and therapeutic functions for people. In this paper, for cake production, by a series of single-factor and orthogonal experiments, used pueraiae as main auxiliary material, and used floor, sugar, eggs, cake oil and purified water as materials, discussed the fomula and production process of pueraiae healthy cake, and determined the best recipe according to the sensory evaluation standard, in order to produce a kind of cake possessing health-care function. The results show that: the quality of pueraiae healthy cake is best when the amount of floor, egg, sugar, peraiae, cake oil and purified water is 200g、220g、140g、8g、10g、130ml respectively.
