A study of enzymatic delactonization of dehydroascorbic acid has shown that this process, in which dehydroascor- bate, possessing vitamin C activity, becomes irreversibly converted to diketo- gulonate without vitamin C activity, goes on at an intensive rate in the liver of vitamin C-synthesizing animals (cow, rabbit, rat), at an essentially slower rate in guinea pigs, and at a minimum rate in the monkeys and man。 |
