| 甜菊糖纯品为白色粉末，分子式为C38H60O18，（化学结构式见图1）。熔点198℃ ，易溶于水，可溶于甲醇、乙醇、四氢呋喃，不溶于苯、醚、氯仿等有机溶剂。有较好的耐热性和稳定性，通常称为热稳定糖料。它属于非发酵性物质，不会引起美拉德褐色反应。 |

Pure Stevioside is a white powder and its molecular formula is C38H60O18, (its chemical structure is shown in Figure 1), with melting point of 198 ℃. it is soluble in water, methanol, ethanol and tetrahydrofuran, but insoluble in benzene, ether, chloroform and other organic solvents. Better heat resistance and stability, often referred to as heat-stable sugar. It is non-fermentable substance which won't cause any Maillard browning reaction. |
