Pure Stevioside is a white powder and its molecular formula is C38H60O18, (its chemical structure is shown in Figure 1), with melting point of 198 ℃. it is soluble in water, methanol, ethanol and tetrahydrofuran, but insoluble in benzene, ether, chloroform and other organic solvents. Better heat resistance and stability, often referred to as heat-stable sugar. It is non-fermentable substance which won't cause any Maillard browning reaction.
