| 本文是关于鲨鱼皮中胶原多肽的分离纯化与表征的研究。鲨鱼皮中蛋白质的含量为86.95%（含量以鲨鱼皮干物质计算），其中61.45%是胶原蛋白。先以鲨鱼皮为原料提取明胶，然后再分别使用复合蛋白酶、中性蛋白酶、碱性蛋白酶、酸性蛋白酶和木瓜蛋白酶对其酶解5个小时，考察酶解产物的水解度和三种体外抗氧化活性指标（包括DPPH自由基清除活性、ABTS自由基清除活性和抗脂质过氧化反应），最终确定以酸性蛋白酶酶解产物和DPPH自由基清除活性作为后续分离纯化实验的原料和活性跟踪指标。 |

| This article is studied the purification and characterization about the shark skin collagen peptides. The protein content of Shark skin was 86.95% and collagen was about 61.45% which was calculated by dry matter. Firstly, the gelatin was extracted from shark skin, and then the gelatin was hydrolyzed by protease, neutral protease, alkaline protease, acid and papain enzyme for 5 hours, respectively. Then, we studied the degree of hydrolysis hydrolysates and three in vitro antioxidant Activity indicators which was included DPPH radical scavenging activity, ABTS radical scavenging activity and lipid peroxidation. Finally, the acid protease enzyme product and DPPH radical scavenging activity was chosen as raw materials and active tracking experiment indicators for the follow-up purification. |
