This article is studied the purification and characterization about the shark skin collagen peptides. The protein content of Shark skin was 86.95% and collagen was about 61.45% which was calculated by dry matter. Firstly, the gelatin was extracted from shark skin, and then the gelatin was hydrolyzed by protease, neutral protease, alkaline protease, acid and papain enzyme for 5 hours, respectively. Then, we studied the degree of hydrolysis hydrolysates and three in vitro antioxidant Activity indicators which was included DPPH radical scavenging activity, ABTS radical scavenging activity and lipid peroxidation. Finally, the acid protease enzyme product and DPPH radical scavenging activity was chosen as raw materials and active tracking experiment indicators for the follow-up purification.
