低于100 ℃时,绿原酸分子间发生脱水反应,高于100 ℃时,由于绿原酸是奎宁酸和咖啡酸缩合形成的酯,酯键键能较低,首先断裂。

低于100 ℃时,绿原酸分子间发生脱水反应,高于100 ℃时,由于绿原酸是奎宁酸和咖啡酸缩合形成的酯,酯键键能较低,首先断裂。

When the temperature is less than 100℃, chlorogenic acid dehydrates. As the ester condensed by quinic acid and caffeic acid, the bond energy of the ester bond of chlorogenic acid is relatively low. Therefore, chlorogenic acid is broken first when the temperature is higher than 100℃.

When the temperature is less than 100℃, inter-molecular dehydration between chlorogenic acid molecules occurs when the temperature is less than 100℃, esters condensation caused by low bond energy between quinic acid and coffee acid parts of chlorogenic acid happens firstly when the temperature is higher than 100℃.
