| The mild changes in pH could lead the fluctuation of ionization state of the active site, and then affect the activity of enzyme. Even many non-covalent bonds which used to maintain the three-dimensional structure of protein could be disrupted by the extreme pH, resulted in the denaturation of enzyme. |
