This article describes the basic construction, working principles of electronic nose and reviews its applications in the producing process and quality control of dairy products. These applications include the mearsurement of dairy products during shelf life, classification of different dairy products, inspection of adulteration in raw milk, identification of special components, analysis of microorganisms and clustering of dairy products from varient places.
