Electronic nose can recognize and identify complex smells and components quickly, objectively and accurately. This article describes the basic construction, working principles of electronic nose and reviews its applications in the producing process and quality control of dairy products. These applications include the mearsurement of dairy products during shelf life, classification of different dairy products, inspection of adulteration in raw milk, identification of special components, analysis of microorganisms and clustering of dairy products from varient places. | Electronic nose can detect, analyze and identify the complex smell and element, and has the characteristics as celerity, impersonality, accuracy and so on in the process of detection. The paper introduced the electronic nose’s basic structure and operational principle, and summarized its application in the process of diary producing and quality control, including the mensuration in dairy shelf-life, the classification of different diary, the inspection of raw milk’s quality, the mensuration of special elements and the analysis of microbe in dairy products, and the classification of different region’s milk and so on. |
