Drying (& dehydration,干燥脱水貌似是两个词) of aquatic products is a process with high energy consumption. As to further increase the drying rate of aquatic products and optimize the energy efficiency, sea cucumbers (有学名吗?) were treated with different ultrasonic frequency and pretreatment time. The hot air drying rate of treated sea cucumbers was determined and, meanwhile, several quality parameters (shrinkage, hydroscopic rate, rehydration rate, etc) of samples with pretreatment were determined to compare with those of untreated samples. The results indicated that the drying rate of sea cucumbers can be improved by the ultrasonic pretreatment without affecting the quality, and while ultrasonic pretreatment was applied for 40-60 min at a frequency of 90 kHz, the drying rate could be boosted approximately 30% . |
