In order to improve the drying qualities of sea cucumber and save energy consumption, we change ultrasonic frequencyd and pretreatment time in the experiments. We determine the hot air dtying rate, shrinkage , hydroscopic rate,rehydration rate ,and so on for the pretreatment sea cucumber. The results indicate that it can improve the drying rate of sea cucumber by the ultrasonic pretreatment, and does not affect the quality. It can the improve the drying rate of sea cucumber about 30% under the condition of the frequency for 90 kHz and the pretreatment time for 40 min¡ª60 min. |

As to further increase the drying rate of aquatic products and optimize the energy efficiency, sea cucumbers (ÓÐѧÃûÂð£¿) were treated with different ultrasonic frequency and pretreatment time. The hot air drying rate of treated sea cucumbers was determined and, meanwhile, several quality parameters (shrinkage, hydroscopic rate, rehydration rate, etc) of samples with pretreatment were determined to compare with those of untreated samples. The results indicated that the drying rate of sea cucumbers can be improved by the ultrasonic pretreatment without affecting the quality, and while ultrasonic pretreatment was applied for 40-60 min at a frequency of 90 kHz, the drying rate could be boosted approximately 30% . |
