As the pressure intensifies to reduce nitrogen (N) losses to the environment from pasture-based dairy systems, interest in perennial ryegrass (PRG) white clover (WC) and diverse multispecies swards, where more N for pasture growth is supplied by biological N fixation has been revived. Among the main opportunities to simultaneously improve productivity and sustainability of grazing systems, the incorporation of legumes in grazing pastures to reduce reliance on chemical N application is of critical immediate importance. In Ireland, to date, there has been relatively low adoption of more diverse sward mixtures containing alternative legumes and forage herbs. With that, there is limited data available on the effects of mixed sward pastures on the composition, quality and techno-functional properties of milk and dairy products. The objective of this project is to compare the performance of monoculture swards, with multispecies swards and Holstein-Friesian and Jersey Holstein-Friesian crossbred cattle on dairy system performance, composition and functionality of milk, and important commodity dairy products such as butter and cheese as well as investigate for biomarkers of nutritional and udder health status of the animal within intensive pasture-based grazing systems. Requirements Applicants should have a First or Upper Second-Class Honours BSc. degree in Food Science, Nutrition, Agriculture or a related discipline. The successful scholar should be highly self-motivated with enthusiasm to develop technical skills across a range of disciplines including on farm sampling, laboratory analysis, dairy chemistry, dairy production and processing, gas chromatography technologies, and be prepared for laboratory analyses, periods of field research and food processing activities at the Teagasc Food Research Centre and Dairy Farm. The scholar will be based in the Department of Food Chemistry and Technology in Teagasc Food Research Centre, Moorepark, Fermoy Co. Cork, Ireland; conducting research under the supervision of Dr. Prabin Lamichhane (Teagasc Food Research Centre, Moorepark) and Dr. Tom O¡¯Callaghan (UCC).
