Apoptosises does exist stored process of postmortem muscle. The activation of caspase-3 and change of nuclear morphometry occurred between zero and four days after slaughtering. Apoptosis did exist in three types of muscles during the postmortem conditioning period. The early apoptotic events of the activation of caspase-3, the condensation and margination of nuclear chromatin occurred in muscles cells from the postmortem thirty minutes to the fourth day. The late apoptotic events of DNA fragmentation, the production of 3’-OH termini and secondary necrosis occurred at 4 days later. Apoptosis and caspase cascades system could be associated with the postmortem development of meat quality in skeletal muscles of bulls. |
