During the oil oxidation, it produces a series of breakdown products in stages, starting with primary oxidation products such as peroxides, dienes and free fatty acids, followed by the secondary products including carbonyls, aldehydes, trienes and the final tertiary products. The primary oxidation in the oil mainly results in the formation of hydroperoxides, which can be measured by the peroxide value (PV). In general, the oil with better quality exhibits lower PV. However, PV also decreases as secondary oxidation products appear. Hence, PV test is a good way to measure a number of primary oxidation products in the oil, with good awareness of the oil oxidation stages. |
