| The hydrolysate with the ability of inhibiting enzymatic activity of angiotensin-converting enzyme (ACE) were prepared by enzyme-catalyzed. Four hydrolysate were obtained by hydrolyzing X substrate with A-, B-, C and D-enzyme , respectively. The inhibition rate of ACE, as evaluation index, indicated that the hydrolysate of A-enzyme exhibited the best performance. The optimum hydrolytic conditions of A-enzyme were determined by means of an orthogonal test . |
