摘 要:本文以花椒籽为原料,以此对花椒籽进行预处理、压榨、精炼,在课题组基础上,对样品酸价、过氧化值、磷含量、水及挥发性物质含量进行测定。通过单因素实验考查了精制温度、时间、压力、流量等因素对精制花椒籽仁油出油率的影响,实验结果表明:最佳精制温度为40℃,精制时间为6h,精制压力为25Mpa,精制流量为80Pv。在此条件下,压榨花椒籽仁毛油的精制出油率达到80.04%,经过碱炼精制的样品酸价为1.3(KOHmg/g),过氧化值为0.12(g/100g),磷含量为1.0(mg/100g),含水量及挥发性物质为1.20(g/100g),油脂色泽澄清透明,感官品质优良达到国家食用油标准。
