随着我国经济的飞速发展,人民生活水平的不断提高以及消费意识的改变,食物结构已从单纯的营养型向营养保健型和功能型转变,消费者对具有高档次、高品质、绿色健康食品的需求日益增长。鱼糜制品由于具有风味独特、营养丰富、健康保健等特性,符合了时下的消费趋势和消费者的消费心理,其最大程度的保留了鲜鱼的营养成分,是消费者公认的绿色食品,因此具有巨大的国内外市场潜力。 同时通过改进冷冻鱼糜的生产工艺和改进鱼糜再加工过程中的擂溃技术以及超高压技术的运用,达到提高鱼糜本色的品质,提高鱼糜制品的的品质,提高鱼糜的弹性和白度,降低加工成本,提高利润空间。在日益加剧的市场竞争中凸显出其相应的优势。为企业发展提供发强劲的展动力。 对加工副产品进行综合利用,改革原先粗放型生产方式,提高产品的附加值。经中国海洋大学的研究摸索,提取步骤合理、在一个连续过程中相互铺垫,可以循环提取多种物质。其提取的不同蛋白和羟基磷灰石应用范围广泛,是较为宝贵的材料资源。其创造的效益甚至能超过鱼肉加工品。 该项目的开发,可促进鱼糜制品加工业的持续稳步发展,对其加工副产物进行充分利用创造效益,达到"零排污"的目标。为社会环保事业做出相应的贡献。同时该项目的的产业化应用可极大地满足国内外市场的消费需求,丰富食品消费品种,促进农村各产业的结构调整。 本项目完成后,生产加工技术将达到国际先进水平。运用新技术生产的鱼糜产品不仅具有白度、滋气味等感官品质,弹性和韧性得到大幅的改善,对加工副产品进行充分利用,开发诱食剂、骨材料、胶原等较为宝贵的产品。对鱼肉主原料和副产品这两部分加工,相辅相成,提高了企业的生产效率,降低了产品的成本和损耗率,同事减少了社会污染,因此具有较强的市场竞争力。 |
