Have you ever eaten a Nang?


So, what is Nang?

The flour made cake in Xinjiang.

I think you may have ever met some Uygur people selling such cakes on the street, in many cities.

They are made of wheat flour, with a little salt, sometimes with green onion and other ingredients.

I have stayed in Xinjiang for years, so I have some intimate contact with Nang.

The most unforgettable Nang may be a hot Nang, which is just taken out from Nang pit. At that time, there is a small store selling Nang on our campus, but, I do not know why the opens at about 12 o'clock (that is similar to 10 o'clock in hinterland). Perhaps that is the habit of local people, or they have to spend some time on preparation. Some of my colleagues did not eat breakfast, so after two classes, they will go to this store, and buy a Nang with 0.5 yuan. It is rather expensive at that time to me.

People waits for Nang as the cook making it. When one is ready, one customer will pay and take it away, most often they will walk away as eating. I often ate breakfast, so I seldom buy Nang from this store, in fact, I nearly did not know there is such a store there.

And because I had breakfast every day, so I only bought Nang from that store for several times.

But, it was really tasteful. With the smell of leavened flour, the lower side is a little hard, with the taste and smell of baked flour, while the upper side is soft, there was also the smell of green onion and the taste of salt. You can imagine how inviting it is when you are hungry, and holding such a Nang in the cold winter morning in Xinjiang!  

Once, we went to Shihezi, with several colleagues. On the train bank, one of my colleagues bought some Nang and shared them with us, perhaps that was the first time I ate this food, I found I like it. So, on another train trip to Shanghai later, I bought about 8 Nang. But unfortunately, I didn't eat them, these Nang were very thick, they tasted differently. And when in Shanghai, there is good food service, so when we left Shanghai, these Nang became bad.

At present, when I saw people selling Nang, I often buy one or two.

Later, once when I ate pizza, I found the taste of the crust is nearly the same with a Nang! So, Pizza can be regarded as a dressed Nang! Do you agree with me?

In fact, pizza and Nang are both baked food. Have you ever seen a person making Nang?

In fact, I think it is really not graceful.

Such an aparatus is called Nangkeng (or Nang pit), it is made of clay, it is often outdoors, in a dry place like Xinjiang, raining is not a problem.

It is like a clay table, as tall and big as a kitchen table for 8 persons. In fact, it is cubic, with an opening on the top.

In the opening, there is a big space. First, the cook will burn a lot of wood in the space, when the flake and smoke stop, there will only be red coal on the bottom.

At this time, the uncooked Nang will be pasted on the hot inner wall of the space, after minutes, it will become ready, and the Nang will be taken out with a iron hook.

The cook often sits on the top of the Nangkeng, so, I say it is not graceful.

The name for a food.
It seems there is not such a word in dictionary, but we can creat it.
