水产品腐败变质的原因主要是水产品本身带有的或贮运过程中污染的微生物，在适宜条件下生长繁殖，分解鱼体蛋白质、氨基酸、脂肪等成分产生有异臭味和毒性的物质，致使水产品腐败变质，丧失食用价值。这不仅造成巨大的经济损失，而且威胁到人们的生命健康。
One mainly reason of aquatic product spoilage is microbial which contaminate of aquatic products itself with or in the process of storage and transportation, In appropriate conditions, they can growth breed, decompose protein, amino acid, fat and other components and produce odors and toxic substances, causing aquatic product spoilage, loss of food value. This not only caused huge economic losses, but also a threat to the life and health of the people.

The aquatic product spoilage is mainly due to the presence of microbial in the aquatic products themselves or microbial contamination during the process of storage and transportation, which grow and proliferate under appropriate conditions.
