叶酸在不同PH的稳定性？？---两本教材的说法不一致 已有1人参与

看了两本食品化学的专业教材。一本说叶酸在PH8-12及PH1-2稳定，一本在酸比较稳定，但在中性和碱性条件下很块地破坏。这是两个矛盾的说法，有没有哪个高人出来指点下，到底叶酸的在不同的PH条件稳定性能如何？  |
