[交流] What dishes or cuisines you like most ?

Autumn is a fantastic season that has many good food, and our country has many provinces each of them has special dishes so would you please introduce the dishes yo u like most, and if you can describe the ingredients as well as procedure how to cook it, then we will appreciate that.

To begin with, my favourite dish is Salmon fish head soup in pot

Ingredients:
Salmon fish head about 0.8 - 1.0kg
ginger slices
garlic chops
spring onion pieces
HuaDiao Wine four spoons
Chinese Vinegar
Soyabean sauce

Cut the fish head into reasonable chops, remove sharp teeth and unwanted gill
slightly fire the fish head chops with garlic chops and little peanut oil, purpose to keep it juicy

Burn one bowl of water to hot in the pot, put the fired fish head chops along with garlic chops into the pot, and after a while (20 seconds) add all other ingredients.

Keep high fire for one minute and change over to low fire and wait for another 15 minutes then the serve it in a big bowl.

So let's keep on going.
One dish I love most is the Sweet and sour spare rib (or pork chop if you are a meat lover)
To prepare:
egg york, tomato paste, cooking wine, soyabean sauce, corn starch, vinegar, salt, sugar, peanut oil

1  Chop the spare ribs after clean and dry off
2  mix with salt, sugar, soyabean sauce and cooking wine and stir it even, preserve for 20 minutes
3  mix egg york evenly to the preserved spare rib
4  coat the spare ribs with corn starch powder
5  heat peanut oil from warm to hot but not very hot, and dip the spare ribs to fire
6  when the spare rib skin turns to golden yellow
7  another wok to mix tomato paste and sugar and stir fire until bubbles pops, now add back the spare rib and stir, and add vinegar to stir before done

PS
when the spare rib can be pin through with piece of toothpick, means the spare rib is mature and ready to serve.
