摘要：槐米（Sophora japonica L）即豆科类植物槐树干燥的花蕾，其营养价值极高，且对改善心肌循环、清热解毒、降血脂、软化血管、消炎补肾、防止动脉硬化等有良好疗效，并有养颜抗衰之功效。本文以槐米为主要原料，橙汁、蜂蜜等为辅料，研究了槐米橙汁蜂蜜保健饮料的加工工艺条件。具体对槐米汁的浸提条件、槐米橙汁蜂蜜保健饮料的最佳配方进行了初步研究。结果表明，以槐米为原料，料液比为1׃60，温度为70℃，食用小苏打添加量为0.05%，浸提20 min时，总黄酮化合物（以芦丁计）浸提效果最佳。根据单因素试验及感官评定试验可知，取60%槐米浸提液，加入20%蜂蜜，15%橙汁进行调配，可制得风味独特、清凉爽口、营养丰富的保健饮料。饮料中测得总黄酮含量（以芦丁计）为1.0592mg/100mL，总酸含量（以柠檬酸计）为0.720%，可溶性固形物含量为3.47 Brix，符合酸性饮料国标，可成为符合大众口味的新型保健饮料。
