| 摘要：槐米（Sophora japonica L）即豆科类植物槐树干燥的花蕾，其营养价值极高，且对改善心肌循环、清热解毒、降血脂、软化血管、消炎补肾、防止动脉硬化等有良好疗效，并有养颜抗衰之功效。本文以槐米为主要原料，橙汁、蜂蜜等为辅料，研究了槐米橙汁蜂蜜保健饮料的加工工艺条件。具体对槐米汁的浸提条件、槐米橙汁蜂蜜保健饮料的最佳配方进行了初步研究。结果表明，以槐米为原料，料液比为1׃60，温度为70℃，食用小苏打添加量为0.05%，浸提20 min时，总黄酮化合物（以芦丁计）浸提效果最佳。根据单因素试验及感官评定试验可知，取60%槐米浸提液，加入20%蜂蜜，15%橙汁进行调配，可制得风味独特、清凉爽口、营养丰富的保健饮料。饮料中测得总黄酮含量（以芦丁计）为1.0592mg/100mL，总酸含量（以柠檬酸计）为0.720%，可溶性固形物含量为3.47 Brix，符合酸性饮料国标，可成为符合大众口味的新型保健饮料。 |

Abstract: Sophora japonica L refers to the dry bud of l acacia trees in egumes plants.Its effect range from extremely high nutritional value, improvement of the cardiac cycle, clearing heat and detoxification, lowering blood pressure, softening blood vessels and anti-inflammatory kidney to effect of Anti-woman beauty health. We mainly study on prosessing conditions of Huaimi orange juice honey health drink with the Sophora japonica L,orange and honey as adjunct. We conducted a preliminary study on extraction conditions of Sophora japonica juice and the best formula of the drink. The results showed effect of the otal flavonoids (rutin) extracting gets to the best With Huaimi as raw materials extracting for 20min,1:60 ratio of solid-liquid, the temperature of 70 ° C and 0.05% of baking soda dosage.According to single factor test and sensory evaluation test,we can make obtain unique flavor, cool and refreshing, nutritious health beverage by taking 60% Huaimi of extract, adding 20% honey and 15% orange juice.The drinking contain 1.0592mg/100mL total flavonoids (rutin) and 0.720% total acid content (in citric acid).
