The analysis of nutritional content in Jishan jujube
Abstract
International analysis method and conventional laboratory method were employed in the analysis of nutritional content such as fat, reducing sugar, acidity, ash content, Fe, Ca, Vc and dietary fiber in Jishan jujube and Linxian jujube. It indicated that the reducing sugar of Jishan jujube and Linxian jujube were 48.4% and 36.5% respectively. The fat of Jishan jujube was 0.5% which was 1.5% below that of Linxian jujube. The ash content of Jishan jujube was 1.53% and that of Linxian jujube. Besides the Fe content of Jishan jujube and Linxian jujube were 35 mg/kg and 33 mg/kg. The Ca content of Jishan jujube was 373 mg/kg which was 117 mg/kg more than that of Linxian jujube. Respectively the total dietary fiber content of Jishan jujube and Linxian jujube were 5.7% and 3.0%. But the acidity of Jishan jujube was 3% lower than that of Linxian jujube whose acidity was 5%. The Vc content of Jishan jujube was 16.9 mg/100mg, which was higher than that of Linxian jujube, and the Vc content of Linxian jujube was 14.5 mg/100mg. It can be seen that Jishan jujube has abundant nutrition, highly nutritional value and fairly health care effect. And there will be broad prospects in its exploitation in the future.
