脂肪酶是一种酯键水解酶,它们能催化天然底物油脂(甘油三酯)水解,产生脂肪酸和甘油。脂肪酶在有机相中可催化的反应主要有:酯合成、酯交换、肽合成、酯聚合、酰化等。利用脂肪酶在有机相催化的各种反应可以合成许多高价值产品。由于并不是所有的脂肪酶都能催化非水相中的酯化反应,造成了现有脂肪酶中能有效催化酯合成反应的酶并不多,开发新的具有高酯合成活性的脂肪酶成为人们研究的热点。维生素C作为一种水溶性抗氧化剂,在食品加工中做抗氧化剂以保存食品价值。但是其水溶性及不稳定性限制了它在油脂及化妆品行业的应用。因此,利用脂肪酶将维生素C转化成脂溶性的脂肪酸酯以提高其价值具有重要的意义。

Lipase, an ester linkage hydrolase, helps to catalyze hydrolization of natural oil into fatty acid and glycerin. In the organic phase, the reactions catalyzed by lipase mainly include ester synthesis, transesterification, peptide synthesis, ester polymerization, acylation, et al. There are many high-value products can be made by these reactions above. However, not all kinds of lipase can be used in non-aqueous phase, and then the lipase can be applied actually is difficult. How to develop a new lipase with high activity of ester synthesis is concerned commonly. And as a water-soluble antioxidant, vitamin C (VC) is used widely to save food value in food processing. Then VC is water-soluble and instability, it is limit the application of VC in oil and cosmetics industries. Therefore, using lipase to transform VC into fat-soluble fatty acid ester is very significant in enhancing the value of VC.希望能帮到你
