How to develop a new lipase with high activity of ester synthesis is concerned commonly. And as a water-soluble antioxidant, vitamin C (VC) is used widely to save food value in food processing. Then VC is water-soluble and instability, it is limit the application of VC in oil and cosmetics industries.
