| Lipase, an ester linkage hydrolase, helps to catalyze hydrolization of natural oil into fatty acid and glycerin. In the organic phase, the reactions catalyzed by lipase mainly include ester synthesis, transesterification, peptide synthesis, ester polymerization, acylation, et al. There are many high-value products can be made by these reactions above. However, not all kinds of lipase can be used in non-aqueous phase, and then the lipase can be applied actually is difficult. How to develop a new lipase with high activity of ester synthesis is concerned commonly. And as a water-soluble antioxidant, vitamin C (VC) is used widely to save food value in food processing. Then VC is water-soluble and instability, it is limit the application of VC in oil and cosmetics industries.
