| Several organisms of the genera Lactococcus and Lactobacillus metabolise glucose moiety of lactose but not galactose which is secreted into the medium. Studies of different factors involved in the control of lactose and galactose utilization by LAB evidenced a different organization of the cluster and variable and species-specific mechanisms of regulation. In many cases, the capacity to use galactose results to be strain-dependent and it is possible to select both strains Gal-q and strains Gal-y in different amounts depending on LAB species . |
