First, these strains were identified as Lactobacillus sakei by phenotypical and physiological tests. Then, these strains were confirmed by 16S rDNA identification. Bacteriocin produced by strains was sensitive to protease. It suggested that bacteriocin produced by Lactobacillus sakei with a broad inhibitory spectrum to both Gram-positive bacteria and Grtam-negative bacteria. It could have future application in food safety.
