Normally I will be not happy with the professor who tends to push you to make a decision. If he did ask you explicitly for a deadline and while you have other offers, then think it over. But if he didn't, there is really no necessary to worry him in the way of asking for a deadline. Whatever, I think in any cases, there is always a method that could save your choices, just tell him "I am on holidays, thus not available". Please use it only if he pushes you hard.
