英文说烹饪

    [size=]Here're the basic ways to prepare a western dinner:
   
    * boil:煮(沸)
    Boiling is cooking in a liquid such as water,wine,stock(高汤),or a combination that bubbles at a high temperature.
    * simmer:文火煨,小火慢炖
    Simmer is cooking in a liquid just below the boiling point.
    * poach:(低于沸点)水煮
    Poaching is to cook in a liquid that is not actually bubbling.
    * steam:蒸
    Steaming is cooking foods by exposing them directly to steam.
    * blanch:焯;用沸水轻烫
    Blanching is cooking food items briefly in boiling water.
    * roast:烤,烘烤
    Roasting is to cook foods by surrounding them in dry heat usually in an oven.
    * bake:烘焙
    Baking is essentially the same as roasting but it's normally associated with baking bread or cakes .
    * broil:烤(在食物上方加热)
    Broiling is to cook foods at a high temperature with an overhead heat source.
    * grill:(在考架上)烤,(在食物下方加热)
    Gtilling is done on open grate(炉架,烤架) over a heat source.
    * saute:(少量油)快炒,嫩煎
    Sauteing is to cook quickly in a small amount of fat.
    * fry:油炸,油煎
      pan-fry:油煎,放在油煎锅或长柄平底锅中用少许油煎
      deep-fry:油炸,通过把...浸入盛有油的深底炊具里炸
    * braise:焖,炖(大块食物,如鸡腿,猪排等),先用油炒黄,然后在一个有盖容器中加少量水炖
    * stew:炖(切成小块的食物)are referred to as braised.
