本文对nisin产生菌株的发酵培养基进行优化。首先采用Plackett - Burman(PB)试验设计法对酵母膏、葡萄糖、KH2PO4、MgSO4、Tween80、发酵时间、pH、发酵温度、接种量等9个因素对nisin的影响进行了研究，筛选出3个主要因素：葡萄糖、Tween80、pH；然后通过最陡爬坡、中心组合实验设计（CCD）和响应面分析方法(RSM)确定主要因素的最佳浓度分别为：葡萄糖2.32 g/L、Tween80 0.1 g/L、pH 7.0。在优化条件下nisin抑菌能力增强，形成的抑菌圈直径是24.76 mm，是优化前的1.25倍。

This generated strains of nisin to optimize the fermentation medium. First, using Plackett - Burman (PB) experimental design method, yeast extract, glucose, KH2PO4, MgSO4, Tween80, fermentation time, pH, fermentation temperature, inoculum size and other factors 9 studied the effects of nisin, selected three major factors: glucose, Tween80, pH; then steepest ascent, central composite design (CCD) and response surface methods (RSM) to determine the optimal concentration of the main factors were: glucose 2.32 g / L, Tween80 0.1 g / L, pH 7.0. Nisin in antimicrobial activity under optimal conditions enhanced the formation of inhibition zone diameter was 24.76 mm, is 1.25 times before optimization.
