The objective of this study is to optimize the ultrasonic-assisted extraction conditions of FVP (ratio of water to raw material, ultrasonic power, ultrasonic time, and ultrasonic temperature) using response surface methodology and analyze the effects of four factors on extraction rate. Subsequently, the AChE inhibitory activity of FVP obtained under the optimal conditions has been investigated. According to the relationship between oxidative stress and memory deficits, 1,1-Diphenyl-2-picryl hydrazine (DPPH) radical scavenging assay is also considered to evaluate its antioxidant ability.
